Straight from the Source - Stacy Deetz of Hangry Kitchen

Butternut squash dumplings are a fall, fan favorite.

Stacy Deetz is bringing locally sourced dishes to the table. Her restaurant, Hangry Kitchen, prioritizes serving the season’s best local produce, meats, fish, and more.

A graduate of Johnson and Wales culinary institute, Deetz spent time working in restaurants throughout Boston before calling Rhode Island home. She opened Hangry Kitchen in Pawtucket in December 2023. 

Since opening her restaurant, Deetz has formed lasting relationships with farms and local producers throughout the state. She’s currently sourcing her menu from over 25 Rhode Island based farms, fishmongers, and small businesses. 

“About 95% of our food is sourced locally,” said Deetz. “There’s this myth that it’s not attainable to mostly use local supply. We’re proving it’s possible.”

Each week, her suppliers drop by the restaurant with their seasonal selections. As a result, the Hangry Kitchen menu is constantly rotating. Diners can expect new menu items throughout the month and major changes on a seasonal basis. While this can be challenging, it provides customers a glimpse at the magic behind local sourcing. 

The Jack-O-Lantern Juice cocktail, made with heirloom pumpkin puree, vodka, and brown sugar simple syrup, will be available through November. 

“Anthony Bourdain once shared that everyone thinks all tomatoes are from Italy. In reality, he shared that they’re just eating seasonally there,” said Deetz. “You can get really beautiful tomatoes right in Rhode Island. But when they’re out of season, they’re off the menu.”

In addition to taste and quality, she prides herself on the sustainable impacts of local sourcing. She’s intentional with composting and reducing food waste within the kitchen.

“We select partners who are making ethical and sustainable choices,” she said. “Some of our farmers are using regenerative soil. We’re really looking for partners who are doing their part and share our values.”

Throughout the fall, diners can expect to enjoy thriving varieties of squash, root veggies, and brussel sprouts. While the menu constantly rotates, a few favorites remain on the menu through the season.

Butternut squash dumplings, served with brown butter and pickled apple, and the Jack-O-Lantern Juice cocktail, made with heirloom pumpkin puree, vodka, and brown sugar simple syrup, will be available through November. 

For Deetz, she loves creating unique dishes and bringing sustainability awareness to her customers. 

“Our guests really enjoy learning about our sourcing and process,” said Deetz. “We’re starting these important conversations.”
